Your NIR results show you a reading for Oil A, and one for Oil B. But what is the difference? Why do you need to have two readings? Let us explain...
Oil A (or Fat A or Fat EE - they are all the same) is the ether extractable portion of fat in the sample. This is also called crude fat and is slightly higher than the true fat (fatty acid content) due to extraction of other nonpolar (ether soluble) components in the sample.
Oil B (or Fat B or Fat AH) on the other hand is an indication of total fat in the sample and is achieved by adding an acid hydrolysis step prior to the ether extraction step mentioned above. This releases any bound fats or protected fats so that they can be extracted in the ether extract stage. In general for most ingredients the Oil B result will be about 1% higher than the Oil A value.
